Apple Crisp

I don’t know why I do not make this recipe more often! I always forget about it until I have a pile of apples that no one wants to eat any more. My family either gets sick of eating apples or the apples are not as crunchy any more so they won’t eat them. As much as my family loves this recipe, I really should make it more often!

Apple Crisp takes incredible served warm with a scoop of vanilla or butter pecan ice cream but it is still delicious on its own. I also tend to throw in other things that are laying around. If I have some berries or rhubarb that is also about to go bad I will throw those in. Many times I have a small amount of nuts left from another recipe so I will mix that in with the oatmeal topping. You can do a lot of playing around with this recipe.

APPLE CRISP

You will need

Filling
8 cups apples, chopped
3 Tablespoons flour
1 cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon

Topping
1 cup brown sugar
1 cup oatmeal
1 1/2 cup flour
1/2 cup butter

DIRECTIONS

1. Grease a 9 x 13  pan

2. Peel and chop up the apples

3. Mix up the filling in a bowl and then place in pan

4. Mix up the topping in a bowl and then place in pan

5. Bake at 375 degrees for 40 minutes or until brown

I would say that it is “as easy as pie” but it is MUCH easier and better tasting I think!

*Diabetics – I also make this recipe replacing the sugar and brown sugar with artificial sweeteners made for baking so that a diabetic relative can eat some with us and no one can tell the difference!
